Did you know sweet potatoes are one of the oldest vegetables known to man? Sweet potato relics have been found in Peru dating back 10,000 years. They are also extremely healthy being an excellent source of vitamin A, vitamin C, manganese, copper, potassium, and fiber just to name a few. This recipe is a simple healthy way to start your morning.

Time: 20-30 Minutes


  • 1 large sweet potato (makes 2 boats)
  • 2 large eggs
  • Salt, to taste
  • Black pepper, to taste

Choose your own fillings; some possible combinations:

  • Tomato (diced) and spinach
  • Broccoli florets and cheddar cheese (shredded)
  • White onion (diced) and red bell pepper (diced)


  1. Preheat oven to 400°F (200°C)
  2. Use a fork to pierce holes all over the sweet potato
  3. Microwave the potato for 7 minutes until it has softened significantly
  4. Slice the potato in half and use a spoon to scrape out the inner flesh, making sure to leave at least a ¼-inch thick border on each side. Save the scooped out potato parts to use for side dishes
  5. Transfer the potato halves to a parchment paper-lined baking sheet
  6. Fill each of the potato halves with 1 egg and an assortment of fillings for whatever flavor combinations you’d like. Season each potatoes with salt and pepper
  7. Bake for 8-12 minutes, until the egg has cooked to preferred doneness
